Vegetable pakoras


  • 200g plain or gram flour
  • ½ tsp baking powder
  • 40g spinach, chopped
  • 200g potato, grated
  • 1 onion, thinly sliced
  • 2 tbsp fresh coriander, chopped
  • 1 green chilli, finely chopped
  • 1 tsp ground coriander seeds
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 60ml water, or as required
  • Salt and pepper
  • Vegetable oil, for deep-frying


  1. In a bowl, mix together the flour, baking powder, spinach, grated potatoes, onion, fresh coriander, green chilli and spices. Combine well and season with salt and pepper.
  2. Slowly add the water and stir to create a thick batter. Add extra flour if the mixture is too thin. Once the pakora batter is ready, set it aside until the fryer is ready.
  3. Preheat a deep fat fryer to 180C (you can use an air fryer for this recipe, but the timing will vary depending on the model).
  4. Using a tablespoon, drop the pakoras into the oil, frying only a few at a time. Gently flip the pakoras while frying so they cook evenly.
  5. Using a slotted spoon, remove the pakoras from the fryer and place on a paper towel to absorb excess oil. Season well and serve immediately.
