Award-winning food blogger and bestselling author of Family Food Made Easy Jolene Cox, also known as One Yummy Mummy, has been developing and perfecting recipes designed to help busy families in the kitchen for over 20 years. Alongside her sidekick, daughter Lily-Mae (8), she started an online Family Cooking Club last year, which is now going from strength to strength. The Tallaght mum, who now lives in Co Fermanagh, says: “A big part of my ethos is trying to get kids into the kitchen. During lockdown I started doing cook-a-longs over Zoom. They started to grow and more and more people started to tune in every week. “The Family Cooking Club is all about getting back to the basics of cooking. With the kids in the kitchen, they can have their tablet out but they are watching our cook-a-longs and getting into the kitchen. They are learning new tips, tricks and life skills. “The kids in the club are making actual meals, not just sweet treats, like their own cheeseburgers and pasta carbonara. They’re learning real skills that they’ll need later on in life. They really relate to Lily-Mae because she’s a kid. “I started a food blog when Lily-Mae was really young and through mother and toddler groups I was going to, the mams were always looking for recipe suggestions and sometimes they just weren’t very confident in the kitchen,” she explains. “I was always saying to them that you don’t need fancy ingredients, just a few really good basic recipes. I then started putting recipes up on oneyummymummy.com and blogged about it. “It just grew from there. It won an Irish Quality Food Award in 2017, Food Blog of the Year and then I got a book deal. The first cookbook, Family Food Made Easy, came out in 2018 and I started developing recipes for newspapers and magazines. “My second book, Family Kitchens, is out now and the Family Cooking Club has let us reach out to more parents.”

HOMEMADE CHICKEN CURRY

Ingredients (serves 4):

■ 4 free range Chicken breasts, sliced.

 ■ Homemade curry paste

■ 2 tbsp tomato puree
■ 1 tbsp mango chutney
■ 2 tbsp curry powder
■ 1 tsp turmeric
■ 1 tsp mixed spice
■ 1 tsp ground coriander
■ 400ml coconut milk
■ 200ml chicken stock
■ A drizzle of rapeseed oil

Method:
1. Remove the chicken breasts from the packaging and cut into slices.
2. In a small mixing bowl, make the homemade curry paste. Place the
tomato puree, mango chutney, curry powder, turmeric, mixed spice and ground coriander in the bowl and mix together.
3. Next, place a medium heavy-based saucepan over a medium heat with a drizzle of rapeseed oil.
4. Add the sliced chicken breasts to the saucepan and sizzle for 5 minutes.
5. Spoon the curry paste over the chicken and sizzle for a further 5 minutes.
6. Pour in the coconut milk and hot chicken stock. Cover with a lid and simmer over a low heat for 20 minutes.
7. Garnish with fresh coriander and serve with boiled rice

BEEF GOULASH PIE

Ingredients (serves 4):
■ 1 tsp of rapeseed oil
■ 450g stewing beef pieces
■ 1 tbsp plain flour
■ 1 large onion, chopped
■ 2 garlic cloves, minced
■ 3 large tomatoes, diced
■ 1 red pepper, thinly sliced
■ 2 tbsp tomato puree
■ 1 egg
■ 1 tbsp sweet paprika
■ ½ tbsp smoked paprika
■ 300ml beef stock
■ 1 tbsp crème fraîche
■ 100g chorizo slices
■ 1 pack of puff pastry

Method:
1. Heat a teaspoon of rapeseed oil in a casserole dish or heavy-based saucepan.
2. Remove all visible fat from the beef pieces. Sprinkle with the flour and brown well in the pan on medium heat.
3. Add the onion, garlic, diced tomatoes and red pepper to the pan with the beef.
4. Fry until softened, add the tomato puree and sweet and smoked paprika and mix well.
5. Pour over the beef stock. Cover and cook on the hob over a gentle heat for about 4 hours.
6. After 4 hours, dollop in the crème fraîche and stir thoroughly to ensure it is well mixed in.
7. Transfer to an ovenproof pie dish and add the chorizo. Top with puff pastry and brush with egg.
8. Oven bake at 180C for 40 minutes.
9. Serve with creamy mash.
