INGREDIENTS Serves 4

  • 2-3 onions, thinly sliced
  • 75g plain or gram flour
  • 1 tsp ground coriander seeds
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • 25ml water
  • Salt and pepper
  • Vegetable oil, for deep-frying

METHOD

  1. In a bowl, combine the flour and spices and add the water until a thick batter is achieved. Add the sliced onions into the batter and stir to combine. Add extra flour if the mixture is too thin.
  2. Heat some oil in a shallow pan or preheat a deep fat fryer to 180C (you can use an air fryer for this recipe, but the timing will vary depending on the model).
  3. Using a tablespoon, drop the battered onions into the oil, frying only a few at a time. Gently flip the bhajis while frying so they cook evenly. Using a slotted spoon, remove the bhajis from the fryer and place on a paper towel to absorb any excess oil. Season well and serve immediately.
