Beef meatball curry


  • 500g lean minced beef
  • 1 egg
  • 1 shallot, chopped
  • 50g fresh breadcrumbs
  • 1 tbsp Worcestershire sauce
  • 2 tbsp sunflower oil
  • 1 onion, chopped
  • 1 carrot, thinly sliced
  • 1 small pepper, sliced
  • 2cm fresh ginger, chopped
  • 1 tsp red curry paste
  • 400ml tin coconut milk
  • Zest and juice of ½ lime
  • Salt and pepper
  • Jasmine rice, to serve


  1. In a bowl, combine the minced beef, egg, shallot, breadcrumbs, Worcestershire sauce and seasoning. Divide the mixture into 8-12 pieces and roll between your hands to make meatballs, then set aside until needed.
  2. Preheat a large sauté pan or wok over medium-high heat and drizzle over the oil.
  3. Add the meatballs to the wok and cook for 2-3 minutes, stirring once or twice.
  4. Add the remaining vegetables and cook a further minute or so, until they just start to colour.
  5. Pour in the coconut milk, curry paste and lime zest and juice.
  6. Simmer for a further 4-5 minutes until the meatballs are fully cooked through. Serve with boiled jasmine rice.
