Peri Peri Spiral Potatoes

Ingredients: ■ Meade rooster potatoes ■ Frylight olive oil cooking spray ■ Nando’s Peri-Peri salt

PERI PERI SPIRAL POTATOES


Method: 

1. Preheat your grill or barbeque.
2. Put metal skewers through your potato.
3. Take a knife and cut a downward spiral into your potato.
Cut continuously until you’ve done the entire potato from top to bottom.
Tip: rotate your potato — not the knife.
4. Carefully spread out the spiral evenly along the skewer.
5 Brush or spray the potato with oil and sprinkle over the Peri Peri salt.
6. Cook in a low heat for 45 mins.
7. Serve while hot and enjoy.
Cooking times and temperatures will vary depending on the size and type of your barbeque.

BREAKFAST ENCHILADAS

Ingredients (Serves 6):
■ 6 Glendarra traditional
jumbo pork sausages
■ 6 Glendarra unsmoked back rashers
■ 300g of Meade cup mushrooms
■ 6 Old El Paso flour tortillas
■ 1 tin of Heinz baked beans (415g)
■ 1 tin of Don Mario
plum tomatoes (400g)
■ 150g of Iceland grated mature cheddar

Method: 

1. Heat oven to 180C.
2. Place the sausages on a large shallow baking tray and cook for 15 minutes. Add the mushrooms to the tray and cook for 5 minutes more. Add the bacon to the tray and cook for a further 5 minutes.
3. Lightly oil an oven proof dish.
4. Slice the sausages and quarter the mushrooms, snip the bacon into small pieces and set aside.
5. Divide the sausages and mushrooms between the wraps and sprinkle over 100g of the cheese before rolling up and placing in the oven proof dish.
6. Spoon over the beans, scatter over the tomatoes, sprinkle over the remaining cheese and finally sprinkle over the bacon bits.
7 Bake in the centre of the oven for around 15 minutes until the cheese is melted.
