This low-fat alternative is bursting with flavour. Feel free to substitute the beef for lamb, diced chicken or turkey.

  • 450g minced beef
  • 1 tsp oil or ghee
  • 2 onions, finely chopped
  • 2-3 garlic cloves, chopped
  • 1cm fresh ginger, grated
  • 2-3 tbsp curry powder
  • ½ tsp garam masala
  • 1 small chilli, sliced
  • 1 tbsp tomato puree
  • 300ml beef stock or water
  • 100g peas, frozen
  • Salt and pepper
  • Fresh coriander, to serve
  • Rice and raita, to serve

  1. Heat the oil or ghee in a sauté pan and add the onion, garlic and ginger and cook for 2-3 minutes until softened and lightly coloured. Stir in the mince and cook for 4-5 minutes over high heat until browned. Add the curry powder, garam masala, chilli and tomato puree and cook for 2-3 minutes to release the flavour, then add the beef stock. Bring to the boil, then reduce the heat and simmer for a further 10 minutes. Add the peas and cook for a further 2-3 minutes until softened.
  2. Check the seasoning and sprinkle with coriander. Serve with some rice and raita.
